500g organic white/ wholemeal flour
250 ml warm water
50 ml olive oil
a handful of chopped olives
1.5 teaspoon of salt
a sachet of dried yeast
mix flour with salt, yeast and olives. In a jar measure water and oil, pour into flour mixture and knead till it forms an uniform dough...leave covered with a kitchen towel in a warm place for 30 min, then knead lightly again, place into a floured baking pan, cover and leave again for 30 min.
heat oven to 200 C, place in a cup of boiling water to help the crust, and bake bread for 30min. When finished it has to have a hollow sound when knocked on the bottom. Leave to cool on a rack...
